When we waste food we never realize that it can actually feed so many hungry people out there.


According to research, around one-third of the food produced in the world for human consumption–about 1.3 billion tons–is lost or wasted each year.

It is believed that this waste needs to be minimized so that the death rate due to hunger can be reduced for the betterment of mankind.

As a baby step in this direction, there is one outlet that is making ice cream flavours from the food waste that would have ended up in the trash otherwise.

What is this ice cream?

The Portland-based Salt & Straw, an ice cream institution, has innovated an ice cream that is rich in flavours and off-white in colour streaked through with warm brown apple butter that cuts the sweetness of the spiced-rum-flavoured cream. Their chocolate ice cream is infused with marshmallow fluff, and their strawberry holds hints of honey balsamic vinegar and black pepper. Why do they do it?

According to Kim Malek, Founder, Salt & Straw, the whole idea of utilising the waste food instigated her to bring this change. She was shocked to know that 40% of food in the United States, is wasted every year. She feels happy that this initiative is solving two purposes-providing employments to people and at the same time minimizing food waste in the country. During the summer months, Salt & Straw’s shops are staffed by extra 30-40 people, who are trained extensively about the flavours and processing of these unique ice cream flavours.

How do they do it?

If we go by the online reports, these unique ice creams are available only during the summer months. They have a supply chain from different parts of the food market where the manufacturers and producers help them with the leftover waste food and they prepare the best out of the waste to woo the customers. Their idea is to tell the customers that it’s possible to make something incredible and fun out of something that was going to be wasted.

Nothing is impossible in this world. All you need is the vision and willingness to bring the change.
