This recipe for sweet potato fries is the perfect way to introduce your family to this delicious and versatile veg.
Ingredients:
- 4 large sweet potatoes
- Dried thyme
- Dried rosemary
- Ground black pepper
- Parmesan cheese (optional topping)
(any other veg you’d like to introduce as a side serving)
Method:
Heat the oven to 180°C. Keeping the skin on, slice the sweet potatoes widthways to form circles, then slice it into thin fingers, making each finger about ½–1 cm thick (You can also slice wedges if that is what you prefer).
Place on a greased baking tray, sprinkle the herbs and pepper on the tray, and place the fingers/fries on top.
Sprinkle more herbs and pepper on top of the fingers/fries, enough to almost cover them.
Place in the oven and bake for 15 min.
Turn the pieces over after 15 min. (there shouldn’t be any need to add more oil) and bake for a further 20 min.
Remove from the oven once slightly browned and cooked through. If you want them crispier, leave them in for a bit longer.
