Ingredients:

  • 2 packets of tennis biscuits (or any plain digestive biscuits or graham crackers)
  • 100g unsalted butter (melted)

For the Filling:

  • 1 can (385g) of sweetened condensed milk
  • 250ml cream (whipped)
  • 100g Peppermint Crisp chocolate bars (grated)
  • 1 tsp vanilla extract (optional)

Instructions:

1. Prepare the Base:

  • Crush the tennis biscuits or digestive biscuits into fine crumbs. You can do this by placing the biscuits in a plastic bag and using a rolling pin or pulsing them in a food processor.
  • Melt the butter in a microwave or on the stove.
  • Combine the biscuit crumbs and melted butter in a mixing bowl and mix until everything is well-coated with butter.
  • Press the mixture into the base of a tart dish (or a pie dish) to form an even layer. Use the back of a spoon to press down firmly.
