Here’s how you can make them at home:

Ingredients:

For the vegetable filling:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder

Instructions:

  1. Prepare the veggies:

    • Begin by washing and chopping the vegetables. Dice the onion, bell peppers, and zucchini, and slice the mushrooms. If using fresh corn, cut the kernels off the cob.
  2. Cook the vegetables:

    • Heat a large pan over medium heat and add the olive oil. Once the oil is hot, add the diced onion and sauté for 2-3 minutes until it becomes soft.
    • Add the bell peppers, zucchini, mushrooms, and corn to the pan. Stir and cook for about 5-7 minutes until the vegetables are tender and slightly caramelized.
  3. Season the filling:

    • Add the cumin, chili powder, paprika, garlic powder, salt, and pepper to the vegetables. Stir everything together so the spices coat the veggies evenly.
