As per a study by Tufts University, vitamin C and B3 are more concentrated in the skin of carrots than in the flesh.

You may continue peeling carrots if you have a habit of doing so, but don’t toss them in the trash. You can use them for other dishes.

Here are a few interesting and healthy kitchen uses of carrot peels that you need to know.

1. Healthy stock

Boil carrot peels, add some salt to it and you can use it as healthy stock for any curry, soup, or even for cooking rice. The fibre content in peel makes it a healthy stock for other purposes.

2. Make chips

They are rich in fibre and you can simply season them with spices and bake them or air fry them, into crunchy and healthy chips.

While pesto is made with basil, pine nuts, olive, and parmesan. You may add carrot peels along with walnut and pistachio and make your pesto healthier.

4. Make soup

Simply blend the peel along with some soaked nuts and then cook it with coconut milk, and season with salt, pepper, and chilli flakes. This fibre-rich soup is good for people who wish to lose some extra inches.

5. Use for garnishing

From sandwiches, and wraps, to risotto, you can use the peel as a garnish for any savoury dish. You may air fry them to make them a bit crunchy or use them raw to get the juicy flavour.

6. ​Candied carrot peel

Soak the peels in sugar syrup and then bake at 200°F for 30 to 60 minutes, then at 100°F until dry. This is a healthy homemade candy treat that you can give your kids in school tiffin too.

7. ​Make powder

Sun dry the peels and then blend them into a coarse powder. You can use this powder in curry, soup, or even add it to your salads to increase the nutritional value of the dish.
