Mushrooms are super nutritious and people who do not eat mushrooms or hardly eat them are depriving themselves of all the goodness found in this fleshy plant food.


Mushrooms are a good source of protein, fibre, vitamin D and have good water content.

Nutritionists recommend including mushrooms in your daily diet along with other seasonal veggies.

Here are some delicious mushroom recipes to eat without gaining weight. Couple these with regular workouts and portion control, and you will be on a speedy weight loss journey.

1. Clear mushroom soup

Ingredients

  • 200 gms white button mushrooms
  • 2 cups spring onions whites
  • 1/2 tbsp sesame oil
  • Garlic
  • 1/2 inch ginger
  • 1 tsp chopped celery
  • 1/2 tsp crushed black pepper
  • 1 tsp gluten free naturally fermented soy sauce
  • 5 tbsp spring onion greens, chopped
  • 3 cups water
  • Salt as required

How to make clear mushroom soup

Take a pan and heat the sesame oil. Add finely chopped garlic and ginger and sauté for a few seconds. Add the sliced spring onion whites and sauté for another minute. Add the sliced mushrooms and finely chopped celery. Sauté for two minutes on medium flame. Keep stirring.

Now add the water and mix everything together. Simmer the soup for 5 minutes on a low flame. Add soy sauce, crushed black pepper and salt. Cover with a lid and let the soup simmer on a low flame for about 15 minutes. Once the soup is ready, add chopped spring onion greens and serve hot.

2. Warm mushroom salad

Ingredients

  • 50 gm cepe mushroom
  • 50 gm shitake mushroom
  • 10 gm button mushroom
  • 20 gm shimji mushroom
  • 1 onion
  • Salt as per taste
  • 1 tsp dark soy
  • 1 tsp light soy
  • 1/2 tsp chopped spring onion
  • 10 ml oil

​How to make warm mushroom salad

Soak all the mushrooms for 2 hours and then slice all of them. Add the mushrooms in a wok and toss them until they become dry. Add oil in the wok along with mushrooms, light soy, dark soy, and salt. Toss these for a while. Add spring onions and garnish with fried onions. Your mouth-watering, nutritious salad is ready!

Mushroom toast

Ingredients

  • 1 tbsp extra-virgin olive oil
  • 200 gm mushrooms
  • 2 sprigs fresh thyme
  • Salt to taste
  • Crushed black pepper, to taste
  • 1 medium shallot, diced
  • 2 slices bread
  • 2 tbsp chopped fresh herbs

3. ​How to make mushroom toast

Heat oil in a saute pan over medium heat. Add the mushrooms and cook them for about three minutes. Add some thyme sprigs, salt and pepper to taste. Sauté the mushrooms until they release their water. Sauté the shallots for about 3 minutes. Take the filling out and toast 2 slices of bread on the pan. Place the mushroom mixture on top of the toast and sprinkle the herbs. Serve and enjoy!

4. ​Mushroom brown rice

Ingredients

  • 1 cup brown basmati rice
  • 9-10 mushrooms
  • 1 onion
  • 2 tbsp olive oil
  • 1 green capsicum
  • 1 tsp black pepper
  • Salt to taste
  • 2 cups water

How to make mushroom brown rice

Wash the brown rice with water. Wash and chop the mushrooms, onions and capsicum. Take a pan on the stove and add olive oil. Add the onions and saute till pink and translucent. Add mushrooms and cook them well till they wilt. Keep stirring as you cook. Now add the chopped capsicum. Saute and add the brown rice. Cook for 5-7 minutes. Add salt, black pepper and water. Cook for 15 minutes or till the rice is cooked. Serve and enjoy!
