1. Masala omelette

Ingredients:

2 eggs1 tbsp oil1 garlic 2 spring onions1 medium tomato1/2 medium green chili1 tsp curry powder1/2 tsp garam masala1 tbsp fresh corianderHeat oil in a pan. Add crushed garlic, chopped spring onions, tomato and green chili. Add curry powder and garam masala. Beat two eggs in a small bowl. Season it with salt. Mix well again and pout into the pan. Flip the omelette over and cook for 1-2 minutes. Serve immediately.

2. Egg paratha

Ingredients:

2 cups whole wheat flourA pinch of salt1 tbsp oil2 Eggs1/4 cup onions1 green chili2 tbsp coriander leaves1/2 tsp garam masalaIn a large bowl, add flour, salt and oil, and knead the dough. Set aside. In another bowl, whisk eggs along with onions, chili, coriander leaves, garam masala and salt. Create 4 portions out of the dough. Roll out the dough ball in circular motion. Heat a tawa and transfer the rolled out dough on it. As the edges begin to crisp, make a slit and pour the egg mixture. Let it cook for one more minute. Flip and repeat the same on the other side. Drizzle some oil and wait until it is golden brown. Serve hot.

3. Boiled egg chaat

Ingredients:

2 boiled eggs1 tsp tomato ketchup1 tsp tomato chili sauce1 tsp chaat masala1 tsp lemon juice1 tsp roasted cuminSalt to tasteCoriander leaves1 green chili 1 onion1 spring onionSlice the boiled eggs. In a large bowl, add chopped onions, chopped tomatoes, salt, spring onion, chopped green chillies and coriander leaves and mix well together. Add in the spices and tomato ketchup and chili sauce. Sprinkle the mixture on the sliced eggs, along with a pinch of salt. Serve fresh.
